Our sympathy to Steve and Earleen Fronckourak #513 on the passing of their son-in-law in California, from leukemia. He is survived by his wife, 8 year old daughter and his Mother.

Recipe of the Week

Santa Fe Salad

2-1/2 C. cut fresh green beans*
1 C. minced fresh cilantro
¼ C. fat-free sour cream
2 Tbsp. lime juice
2 Tbsp. balsamic vinegar
2 garlic cloves, minced
1-1/2 tsp. ground cumin
¼ tsp. salt
Dash cayenne pepper
2 C. frozen corn, thawed*
1 can (15 oz) pinto beans, rinsed and drained
1 can (15 oz) black beans, rinsed and drained
1 small sweet red pepper, finely chopped
1 small red onion, chopped
1 can (4 oz) chopped green chilies
1 can (2-1/4 oz) sliced ripe olives, drained
½ C. shredded reduced-fat cheddar cheese

1. Place green beans in small saucepan and cover with water.
Bring to a boil; cover and cook for 3-5 minutes or until crisp-tender.
Drain and immediately place beans in ice water. Drain and pat dry.

2. For dressing, in a small bowl, combine the cilantro, sour cream, lime juice, vinegar, garlic, cumin, salt and cayenne. In a large bowl, combine the green beans, corn, pinto beans, black beans, red pepper, onion, chilies and olives. Add cheese and dressing; toss gently to coat. Cover and refrigerate until serving.
YIELD: 10 servings.

NUTRITION FACTS: ¾ cup equals 151 calories, 2 g fat (1 g saturated fat, 5 mg cholesterol, 374 mg sodium, 26 g carbohydrate, 6 g fiber, 8 g protein. DIABETIC EXCHANGES: 1-1/2 starch, ½ fat.

*TIP: This recipe was slashed 246 mg of sodium from each serving, just by using fresh green beans and frozen corn instead of canned.


 

News from Prescott Valley

I received nothing but sad news this week.

There has been a some wild Monsoon action this past week. There have been some damaging storms down in the Valley but only rain up here in the Prescott Area.
Last Sunday afternoon I called Bingo in Prescott. The forecast was for only a 10% chance of rain and the sky was clear so we left the top down on our little red car. During a break I looked outside and sure enough it was raining. I rushed out and put the top up and dried the seats the best I could. I looked up and there was one little black cloud right above the Adult Center that caused the thunder, lightning and rain. When Bingo was over it was clear blue sky outside and everything was dry as if the rain had never happened. So, the top came back down and everything got dry on the way home.

The Diamondbacks are still solidly in last place in the National League, Western Division. Now 26 games behind first place San Diego. So far they have won 47 games and lost 74 for a .388 average. They won just one game since the last newsletter.

Wednesday evening the D-backs were ahead of the Cincinnati Reds 7 to 3 in the eight inning and managed to lose the game 11 to 7. The bullpen was to blame again.
Only 15,509, a franchise low, were there to see it.

Although I like baseball, I do not watch the Diamondbacks as often as I used to.
It is just not exciting when they usually lose.
