News From Rock Shadows

 

There have been a lot of different reasons for power outages in the park over the years. We have a new one - a stray cat somehow got into a transformer near the computer room and zapped it. Unfortunately, a lot of residents were without power for hours until the problem was resolved.
The monsoon season has arrived in Apache Junction. We have enjoyed some rain - long overdue. It, of course, comes with thunder and lightning - a rare show for us. Northern Arizona has had more rain, as Chuck can attest to.
We have two residents recuperating at home from hospital stays. Ione Nelson (Space 208) had surgery for an aneurysm. Kitty Pankey (Space 1147) was treated for a vertigo problem.
Long time residents and friends, Don and Sandy Herman (Space 701), have moved to the Fountain of the Sun Resort. They have purchased a home with their son, Doug.
Frank and I enjoyed a two day get a way to Laughlin with Ralph and Mary Lutz. Frank came home the winner.

I received word Tuesday that Jennifer Lynn Flockhart, 17, of Mechanicsville died Monday, July 5, 2010, due to injuries from an automobile accident. Jennifer was the granddaughter of Keith and Jeri Flockhart, Rock Shadows space 518.

Also Tuesday I was informed that  Lynn Fraker at the age of 54, died from injuries suffered in an automobile accident near Mexico, Mo., on Sunday, July 11, 2010. Lynn Suzanne Stiff was born Dec. 1, 1955, in Cedar Rapids, Iowa, to James William and Jeneane Butterbrodt Stiff. Formally of Rock Shadows space 545.

News from Wisconsin

Hi Everyone from Wisconsin,
No longer will we be envious of the rains in Oregon, as we have plenty here. Our rainfall in June was over 10 inches and we already have another 6 inches thus far in July. Our normal rainfall is about 3"per month.
Having lived on the Peshtigo River for 17 years, it reached an all-time high this year but the rafters are pretty happy. Our home sits at a higher level so has not been affected by the wetness, but some things in the garden are just getting too much.
Your new format of the newsletter is pretty neat.

News from Nebraska

Hi,
Just wanted to let you and the others know that Harv was moved into a nursing home for rehab after spending 4 weeks in the hospital. He is slowly getting stronger but it is very slow progress. Hopefully, he will eventually be strong enough for me to bring him back home and care for him myself. He is in the Central City Care Center in Central City, NE.
I am staying pretty close to home so I can spend a lot of my time with Harv.
I enjoy hearing about the other Rock Shadows people. Thanks, Chuck.

Recipe of the Week

No Crust Quiche 

Ingredients:
5 eggs
1 cup milk (evaporated milk may be used)

1/2 cup biscuit mix
1/4 cup finely chopped onion
1/4 cup finely chopped red and green pepper
1/3 cup sliced mushrooms
5 slices cooked bacon, cut into small pieces
1 cup each grated cheddar and Swiss cheese (save 1/2 cup for topping)
1 teaspoon salt
1/2 teaspoon pepper
Dash Cayenne pepper
Tomato

Preheat oven to 375 degrees. Combine eggs, milk, and biscuit mix with whisk.
Add the remaining ingredients. Pour into a greased 10-inch pie plate or Quiche dish.
Bake for 30 minutes. Remove from the oven and add 6 slices or more of tomato and top with remaining cheese. Return to the oven and bake approximately 10 more minutes or until eggs are set and a knife comes out clean.

This is a fabulous dish. I use a ten inch Quiche dish as shown in the picture. I make it often and leftovers warm up nicely. You can change ingredients as you like. I sometimes use ham and sometimes I add black olives. Rather than Swiss Cheese I sometimes use Sargento Italian blend, it changes the flavor. Use your imagination. I use a convection oven so I reduce the total cooking time to 30 minutes. Chuck


 

News from Prescott Valley

It has been a little on the warm side here in Arizona. Last Thursday it was 121° in Bullhead City. We have had a couple of days where the temperature reached 97° but for the most part it stays in the low 90s with the heat index a few degrees lower.
We are now in the middle of the Monsoon season with storms throughout the state. We have had one small rain but for the most part the storms are missing Prescott Valley. We finally received about an inch of rain this afternoon.

No newsletter August 6th. Jery and I will be in Texas visiting our daughter. Yeah, I know. Not a good place to go in August but our daughter is a school teacher and she teaches summer school until July 23rd then regular school starts there August 11th.

 

 

This past week D-Backs played the New York Mets three games and won all three. The first game was won 13 to 2.  The last game went 14 innings before we finally prevailed. Tonight, Thursday, they start a three game series against the San Francisco Giants.
 

The Diamondbacks are still solidly in last place in the National League, Western Division. Now 19 games behind first place San Diego. So far they have won 37 games and lost 58 for a .389 average.
