Recipe of the Week

Chicken Parmesan Italiano

2 Tbsp. Italian-style bread crumbs
2 Tbsp. shredded fresh Parmesan cheese
1 Tbsp. dried oregano leaves
1 Tbsp. lemon juice
1 small garlic clove, minced
2 boneless, skinless chicken breast halves
Nonstick cooking spray

1. Heat oven to 425° F. Line cookie sheet with foil; spray foil with
nonstick cooking spray.
2. In shallow dish, combine bread crumbs, cheese and oregano; mix well.
In small cup or bowl, combine lemon juice and garlic.
3. Brush both sides of chicken with lemon juice mixture;
coat with bread crumb mixture. Place on sprayed foil-lined cookie sheet. Lightly spray chicken with cooking spray.
4. Bake at 425° F for 15 to 20 minutes or until chicken is fork -tender
and juices run clear.
YIELD: 2 servings.

Nutrition Information per Serving: Calories 210, Total fat 7 g, (Saturated 2 g), Cholesterol 80 mg, Sodium 280 mg, Carbohydrate
6 g, Fiber 0 g.

Dietary Exchanges: ½ starch, 4 very lean meat, ½ fat or ½ carbohydrate, 4 very lean meats, ½ fat.

News from Prescott Valley

Not much to write about this week from Prescott Valley. We have been enjoying mild weather with the temperatures in the 60s. The forecast calls for warming temperatures for the week end.
I did not receive any news from around North America to publish.

The Diamondbacks are now solidly in last place in the National League, Western Division, 8 games behind first place San Diego. So far they have won 14 games and lost 21 for a .400 average. Only one team in all the National League , Huston, has a lower average. Is there any hope?
